Base Ingredients
  • 2 slices Bread (rustic loaf, sourdough, or baguette) Sliced lengthwise
  • 1 per 2-3 toasts Ripe avocado Depending on size
  • 1 large Ripe tomato Juicy and grated or finely chopped
  • 2 large Eggs Fried, poached, or soft scrambled
  • 1 tablespoon Extra virgin olive oil Do not skip, it is the flavor glue
  • to taste Salt and black pepper
  • 1 clove Garlic Optional for rubbing the toast
  • to taste Paprika and chili flakes Optional for seasoning
  • 1 squeeze Lemon Optional for additional flavor

Method
 

Preparation
  1. Toast the bread until the edges are crisp but the middle still has a little give.
  2. Rub a garlic clove lightly on the warm toast, if using.
  3. Spread the grated tomato on top with a pinch of salt and a drizzle of olive oil.
  4. Mash the avocado with salt and pepper and spread it over the tomato.
  5. Top with a cooked egg of your choice, finishing with a tiny drizzle of olive oil.
Tip
  1. If your tomato is watery, let the grated tomato sit in a strainer for one minute prior to using.

Notes

This simple toast is versatile and can be served as a snack or a meal. Adjust toppings based on your preferences. For a heartier version, add turkey slices in between layers.
